So, what is Hokkaido Pumpkin? The Hokkaido Pumpkin (a.k.a. Kabocha) is a very common vegetable in Japan. (I usually get them in Trader Joe's, Whole foods and Asian Groceries.) It has a very sweet taste, with the added bonus of nutty accent. The secret trick is the skin is edible and contains rich beta-carotenes...which means it is so good for your smooth skin! This 30 mins recipe is vegetarian/vegan friendly and the taste divine for everyone. Hope you like the recipe (and my illustration!).
