Winter is squash season! I had so much fun illustrating this Oven-Baked Parmesan Delicata Squash — sweet, tender slices with a golden Parmesan topping. This simple, cozy side dish is perfect for weekday dinners or any seasonal meal.

How to Make Oven-Baked Parmesan Delicata Squash

  1. Pick a lovely, colorful delicata squash :) Preheat oven to 425°F (220°C).

  2. Rinse, seed, and slice squash into 1 1/2-inch pieces.

  1. Toss squash with olive oil, garlic salt, and black pepper, then lay in a single layer on a baking sheet and grate Parmesan over the top.

  1. Bake 28–32 minutes, until tender with golden edges. Enjoy!


This is my winter go-to side dish — I always have a squash or two hanging out in my pantry (or in the garage, where it’s cold and dark, perfect for squash, onions, and potatoes!)😄

I love drawing the little details that make food feel alive — the golden roasted edges, the cozy warmth, and even the simple shapes of the slices. Each ingredient is a tiny story waiting to be illustrated!
