~ why winter veggies are so sweet and delicious? ~
Eating in season is a breeze in the spring and summer, but it can prove to be challenging when cold weather sets in.
However, some vegetables can survive the cold, even under a blanket of snow. These are known as winter vegetables, due to their ability to withstand cold, harsh weather.
The sugar found in the water of winter vegetables causes them to freeze at a lower point, which allows them to survive in cold weather, this process results in cold-hardy vegetables tasting sweeter in the cooler months, making winter the optimal time for harvest.
Here are some easy (and delicious!) recipes that use the sweet winter harvest to you!
PARSNIP SALAD
Yes, parsnips are perfectly safe to eat raw! This may go without saying for some of you, but I don't blame you at all if you were wondering. Raw parsnips are sweet and nutty, with very subtle hints of licorice. Personally, I love their flavor.
HOT GINGER LEMONADE
This beverage is great to drink during cold and flu season. Let’s be honest though, it’s so good that you’ll want to sip on it regardless of being sick or not. This is one of mine and my kiddo's favorite drinks during winter time.
TROPICAL CARROT SMOOTHIE
After festive holiday cookies, you want to start eating a bit healthier ( but veggies are not your thing )?? Try this smoothie, it's delicious and give you lots of minerals/vitamins!
